PALAK PANEER

  INGREDIENTS:
  • 50 grams spinach, chopped and washed.

  • 1 ½  tablespoons oil.

  • ¾ teaspoon cumin.

  • 1 large onion, chopped.

  • 1” ginger, cubed or grated.

  • 3 cloves garlic, crushed.

  • 2 tomatoes, chopped green chillies to taste.

  • A pinch tumeric.

  • 250 grams cottage cheese, cubed.

  • 1 tablespoon butter or cream (optional).

 

 

 

METHOD:

Put in the spinach in a large, microwave - safe bowl, cover and microwave at 100% for 6 minutes. Stand 3 – 4 minutes and then blend according to your preference, either totally smooth or to a knobbly puree.

Into the same dish, put the oil. Microwave 100% (or MW 70% + Conv 200 degrees) for 2(1) minutes. Drop in the cumin. Continue to cook at te same power level for 1 minute. Add the onion, ginger and garlic and cook 4 minutes. The mixture will be very fragrant.

Add the tomatoes and chillies. Cook at the same level 6(5) minutes or till the oil starts to separate. Add the tumeric and cook another 30 seconds.

Stir in the pureed spinach and cottage cheese and Microwave at 60%  power for 5 minutes.

If wished, stir in the butter or cream just before serving.

Serves 4 – 6.

You may do step 1 any day you have some free time and freeze for us on another occasion.
