GAJAR KA HALWA

  INGREDIENTS:
  • 4 cups full cream milk.

  • 1 kg carrots, scarped and grated.

  • ½ - ¾ cup sugar.

  • 5 tablespoons ghee.  (since there is no danger of sticking or burning in the microwave, the quantity of ghee can be reduced for the calorie conscious.

 

 

METHOD:

Bring the milk and the carrots to a boil on the fire. Put into a large microwave safe – bowl. Cook at 100% power for 20 25 minutes stirring thrice till al the milk has been absorbed. The timings vary depending upon the moisture in the carrots.

Add the sugar and stir vigorously to dissolve it. Also add the ghee, cardamoms and half the nuts. Continue to cook at 80% power for 5 minutes, stirring once. The fat will separate.

Pour into a serving dish and garnish with the remaining nuts and raisins.

Serves 6.
