CURD SALAD

  INGREDIENTS:
  • 2 tablespoons gelatine.

  • ½ cup water.

  • 6 cups curds, beaten.

  • 1 small cucumber, finely chopped, salted and drained.

  • 1 small apple, peeled and finely chopped.

  • Salt and black pepper to taste.

  • A pinch of mustard powder.

  • 1 – 1 ½  teaspoons sugar.

  • A small cabbage, finely shredded.

 

 

METHOD :

Put the gelatine with the water in a small bowl. Leave to soften for 5 minutes, then put into the microwave at 100% power for 1 minute 30 seconds. Dissolving gelatin is a delight in the microwave. It is cleanly done, to exactly controlled temperatures.

Stirring continuously, or even beating with a electric beater, incorporate the gelatine into the curds. It is best if they are at  the room temperature.

Stir in the rest of the ingredients, except the cabbage. Pour into a lightly oiled ring mould and refrigerate till set.

Turn out on a pretty plate and serve surrounded by the shredded cabbage. In season you may like to use lettuce instead.

  Serves 6 – 8.
